Oatmeal Pancakes

I hope you’re in the mood for pancakes, because I have an awesome and healthy (at least for my standards) pancake recipe for you. It’s easy and fast to prepare. And last but not least – very delicious.

I hope you’re in the mood for pancakes, because I have an awesome and healthy (at least for my standards) pancake recipe for you. It’s easy and fast to prepare. And last but not least – very delicious.
So let’s get started.
Batter
The ingredients you will need for the pancake batter:
NB! - This makes for 6 little pancakes sufficient for 1 portion so have that in mind if you’re cooking for more people. Usually when I cook for my boyfriend and myself I double the ingredients.
Garnish
To be fair, I’ve been having pancakes for breakfast for the last 4 days so I got to try different combinations. You can make your own combos. Get creative. Here are some of mine.
The ones with chocolate are tastier when you eat them while they’re still hot. Other ways the chocolate hardens and they kind of lose their magic.
But enough talkin’ and let’s get cookin’, shall we?
Preparation
It is super easy. Seriously - fool proof easy.
Just mix all the ingredients in a bowl and your batter is ready.
Here is what mine looked like. Again - this is a dose for 1 portion, that's why it's so little.

Let the pancakes cook for a while longer on this side – just enough for the garnish to start cooking/melting. When you think it’s enough flip them over and cook until ready.
Trust your eyes and instincts here. I flipped my pancakes a couple of times to achieve the desired colour on both sides. There are no rules. Have fun while cooking.
